SMOKED SALMON SPREAD

Yields: 6 Servings

Comment:
It’s like a smoked salmon platter without the fuss.  All the ingredients you love combined into a delicious spread.  Serve with toast points, croutons or crackers for an easy yet elegant holiday appetizer.

Ingredients:
¾ cup minced Pastrami style smoked salmon
2 (8 oz) packages Philadelphia cream cheese
½ cup minced red onion
¼ cup capers
⅛ tsp red pepper flakes
1 tbsp chopped parsley
1 hard-boiled egg, finely minced
salt and pepper to taste

Method:
Soften cream cheese to room temperature, preferably over night. In a large mixing bowl combine all ingredients except boiled egg and parsley. Adjust seasoning if necessary.  Spread mixture evenly across bottom of a bowl and sprinkle in half of the parsley and half of the minced egg. Gently mold into a ball shape and place on serving platter. Sprinkle with remaining parsley and egg.  NOTE:  I’m suggesting pastrami style smoked salmon for the intense flavor; but feel free to use plain smoked salmon.
